	I had this at a high-brow restaurant in Chicago a few weeks ago.  It was exquisite.
Whip plain ricotta cheese with a food processor or mixer.  Gently form into a ball and drizzle with honey.  Serve with crusty bread.  That's IT.  I'm trying this with hot honey for Thanksgiving.  I don't think anything can be easier.

I still don't understand why it took so long to create hot honey. It's genius.

	My long-time beekeper SO had never heard of hot honey.  He's not a fan of spicy, so I am hoping that the hot honey I bought isn't too much.  But then again, the mellowness of the cheese and bread should mitigate any kick.

	Hi, Cat, sounds so delicious! At my son's wedding, a similar dish was served except instead of ricotta, used burrata on top of ciabatta bread?  Don't exactly remember...and I didn't get to eat it because I was schmoozing and by the time I returned to my seat, the next course was served.

	I've had goat cheese with honey. And with orange blossom (delicious) and cranberry (better than I expected.) 
I just admit, I don't know that I've had ricotta outside lasagna.

	Simple appetizers…
The other day I had oven-cooked Brussel sprouts with a drizzle of honey and Balsam vinegar. I suspect the restaurant slightly deep-fried the sprouts after baking in the oven but this was unbelievably good. 
I attempted to do this at home last weekend, but lacked the crispiness deep-frying probably added. Going to try again, but this time air-fry after the oven.
And hot honey…

	I love Brussels in the air fryer. A quick spray of olive oil can help get that finish you're looking for.

Many people have started cooking this in air fryers.    Personally I have done it in a very hot oven for years.  I also add bacon and craisins.   It is delicious.  
Hot honey....as a beekeeper we made several infused honey flavors including cinnamon, coffee,  spiced with peppers and vanilla. 
We would put the infusion ingredients in and let them sit in a sunny windowsill for 6 weeks.  They were a hit when we were selling honey.
